I used to LOVE Trader Joe’s Cilantro Dressing….until I noticed it had wheat flour in it. Since I went off gluten, I had to stop enjoying this baby. (I do think they have since removed it)
My friend, Victoria, recently gave me this recipe which is even better! The only difference is I put in a few tweaks since I like things a bit spicy!
You can put this spicy avocado salad dressing on a salad (duh), as a sauce for chicken or fish, drizzle over a burrito bowl.
- 1 ripe avocado
- 1 cup water
- zest off one lime
- juice from 2 limes
- 1/4 cup apple cider vinegar
- 1 T jalapeno slices
- 1 tsp cumin
- 1/2 t each of salt and pepper
- 1/2 small red onion
- 2 cloves garlic
- 1/2 bunch of cilantro
- Please all ingredients into high powered blender (use a Blendtec) and blend until smooth.
