When the kiddos are hungry (or you are) whip some of these babies up so you have them handy!
- 1 cup oats
- 1/3 cup local honey
- ½ cup almond butter
- ½ cup ground flax
- 1 cup shredded coconut
- ½ cup cacao nibs
- 1 t vanilla
Combine all ingredients together and refrigerate for 30 minutes. Remove and using small cookie scooper, form balls and place on cookie sheet. If too crumbly, add more almond butter.
It’s funny, because if you are at the top of the jar, there is more oil, and you need less. If you are at the bottom, it’s more dry, and you need more.
Chill for another 30 minutes then roll in cinnamon or unsweetened cocoa and store in airtight container.
