Low Carb Egg Cups

So many of us are busy and need quick, healthy foods to take on the go. These low carb egg cups are my basic recipe….feel free to add your favorite veggies and seasonings to create your own. Hint hint…I would love to hear your creative ideas!

Serving Size – 3 egg cups

  • 8 cups Earthbound Farms Power Greens
  • 1 white onion, chopped
  • 4 eggs
  • 2 cups egg whites
  • 6 T feta cheese
  • cayenne
  • onion powder
  • salt and pepper

Heat Oven to 375. Spray muffin tin with olive oil.
Steam greens, drain, and chop. Divide evenly into muffin tins. Add 1/2 T chopped onion into each cup.
Mix eggs, whites, and season to taste. Pour egg mixture over veggies in muffin tin. Top with Feta, dividing evenly.
Bake for 27-30 minutes. Let sit for 10 minutes and enjoy 3 whole cups for a serving. Only 190 calories and 23 grams of protein.
